Fishy Soup

Fishy Soup

Eén van de hier meer populaire gerechten is vissoep. Op allerhande manieren, want da's het handige aan dit soort gerechten. Een echt recept heb je er niet voor nodig. Deze soep is ooit ontstaan als een overschotgerecht en dat zorgt ervoor dat je met vissoep (wat niet noodzakelijk hetzelfde is als waterzooi of bouillabaise) kan doen wat je wil. 't Enige wat er moet inzitten is water, groenten en uiteraard vis! Ik ga meestal als volgt te werk.
Eerst maak ik een bouillon van garnalenafval. Wij eten graag ongepelde grijze garnalen en bewaren dan steeds de schalen en de koppekes. Die vriezen we in en halen deze bij dit soort gelegenheden weer boven. Veel hoeft er niet in zo'n bouillon, de smaak van het garnalenafval is zo hevig dat andere smaakmakers niet in grote hoeveelheden in de pan moeten. Deze keer deed ik er een rode ajuin, wat selder, enkele laurierblaadjes en peper en zout bij. Een half uur sudderen en laat het dan maar aan de kant staan. Hoe vroeger je dit maakt, hoe beter. Zo kunnen de smaken nog meer in het water trekken.
Tussendoor neem ik uiteraard even de tijd om een heeerlijk cappuccino te drinken. :-) 
Wanneer het dan tijd is om de soep te maken (en dat hoeft slechts een uur voor etenstijd), start ik met de groenten. Deze keer werd het prei, witte ajuin, kervel en selder (vooral de blaadjes). Eerst wat stoven en daarna water erbij hé. Je zou er al kruiden kunnen bijdoen, maar dat doe ik liever op 't einde. 
Ondertussen kan je bv. rode en gele paprika in repen snijden. Da's uiteraard voor de smaak, maar evenzeer voor de kleur. Let wel op dat je deze niet te dun snijdt. Grove stukken om zoveel mogelijk smaak in de paprika te houden. Je gooit die ook pas in de soep naar 't einde van de kooktijd toe, zodat de buitenkant van de paprika lekker zacht is, maar de binnenkant nog knapperig.
Eens de groene groenten bijna gaar zijn, kan je er de eerste vis bijdoen. Witte koolvis vliegt er eerst in, omdat ik vind dat deze helemaal los mag koken, zodat de vis over heel de soep zit. Ondertussen had ik ook al de bouillon die eerder getrokken had er bij gedaan. Uiteraard nadat deze gezeefd werd. 
Zalm vliegt er ook in, en deze laat ik ook in grotere stukken zodat deze niet helemaal uiteen valt. 
Ondertussen maak ik de rouille die straks mee op tafel gaat. Wat heb je daar voor nodig? Een eigeel, look, mosterd, (maïs)olie, wit broodkruim (of zoals hier panko) en paprika. Ik doe er meestal geen zout bij omdat de vis het (zee)zout in de soep brengt of peper omdat de paprika de rouille al stevig genoeg maakt. 
 Het bereiden van de rouille is eigenlijk poepsimpel. Je gooit het eigeel, de mosterd en de panko bijeen, en je begint met een vork of een garde te kloppen. Beetje bij beetje doe je er de olie bij en je blijft stevig verderkloppen. Je maakt eigenlijk een mayonnaise. Wanneer je vindt dat je genoeg volume hebt doe je er de geperste look en de paprika bij. Nog een beetje olie om alles goed smeuïg te maken en dan proeven hé! Als de smaak ok is, dan blijf je er af, anders doe je er nog wat look of paprika of mosterd bij, alles naargelang je eigen smaak! (voor wie hier niet mee vertrouwd is: rouille eet je op -liefst lichtgeroosterd- brood of gewoon regelrecht in de soep)
Als laatste gooide ik deze keer nog wat mosselen in de soep. Die mosselen hadden we over van een mosselmaaltijd eerder die week, en dan volstaat het om ze uit hun schelp te halen en in te vriezen. Op het gepaste moment gaan ze dan uit de diepvries en in de soep. Dit is ook het moment om te proeven of er nog iets bijmoet. Peper? Zout? Tijm? Je bekijkt het maar en doet ermee wat je wil!

    Pierogies and Cheddar Broccoli

    Pierogies and Cheddar Broccoli

    It's been awhile since I made pierogies. SP got tired of them after eating them basically once a week for a few months. Then one of his work friends told him she was going to a local place that makes homemade pierogies and offered to pick some up for us to try. She got us two dozen potato and cheddar so I cooked them up with some slow-cooked onions for dinner last Tuesday:


    The pierogies were lighter and tasted much fresher then the Mrs. T's variety we're used to eating. I served mine with a little dollop of sour cream, but unlike all the previous times I've made pierogies I decided not to use bacon in an effort to keep this meal somewhat healthy.


    I also steamed some broccoli in chicken broth and melted cheddar cheese on top before serving:


    It was a delicious meal and even tastier because we hadn't had it in awhile. I think we're spoiled now by the fresh pierogies.

    I have a sweet roll problem.


     
    I blame my original cinnamon rolls. For they are evil. And they must be destroyed.


     
    From there I made these orange marmalade rolls. A triumph.

    Then, with zero shame in my soul, I made these caramel apple rolls.
    Help.
    Over the weekend, I made a whole bunch of cinnamon rolls for Cookie Sunday at church. Cookie Sunday used to be called Linger Longer, and before that, I think it was happy hour, which might have inflamed the evangelicals because of its reference to discounted booze…but I’m a Presbyterian and nobody cared.
    I set aside some of the cinnamon roll dough and decided to try yet another variation of sweet rolls. I steered away from anything having to do with fruit or cinnamon…and I got myself into a little trouble.
    Just scroll. You’ll see what I mean.

    The whole world of my cinnamon rolls begins with this: four cups of whole milk.
    This is a big moment, folks.

    Pour it into a dutch oven or other pot.

    Add a cup of sugar…

    And a cup of oil.

    Stir it together and heat it over medium heat. Don’t let it boil. Turn off the heat and allow it to cool a bit. You want it to be warm, but not too warm for the yeast.

    When it’s cooled enough, sprinkle in the yeast.

    Let it sit on the surface of the warm liquid for a couple of minutes.

    Then add eight of the nine cups of flour.

    Stir it gently to combine. It’ll be super wet and stick.
    And that’s what you want.

    Then place the lid on the pot and allow to sit in a draft-free place for one hour.
    I love using heavy cast iron pots for yeast doughs, as they tend to trap in the warmth and give the yeast more of a yeast-happy environment.

    Christmas Dinner

    Christmas Dinner

    This year SP and I hosted Christmas dinner. It's an easy meal, the same one we've had for years at my stepgrandmother's house, but when you're the one cooking it there's immense pressure to make it fantastic.

    We started with delicious olives, artichokes, meat, cheese, stuffed peppers and asparagus that my aunt brought:


    I hadn't anticipated how long the beef would need to cook, so I'm glad we had stuff to nosh on while we waited. Here it is resting before I carved into it:

    Mashed potatoes (I used my ricer to get them silky smooth):

    ... which is much easier to make then I would have thought. My plate for the first round:


    Everything was delicious, if I do say so myself. Next year I think it'll be even better because I know how long everything takes to cook!
